That transformation is not magic, though it will feel like it the first time you pull a perfectly tempered bar from the mold. The bean-to-bar process is a three-act structure: roast, refine, and temper. Each act has a single, non-negotiable objective. The roast develops flavor precursors and removes moisture. The refine reduces particle size and coats every solid particle in fat. The temper arranges those fat crystals into a stable lattice that gives chocolate its snap, shine, and melt. You cannot skip or combine these stages. You cannot fix a bad roast in the melanger, and you cannot fix an over-refined, gritty chocolate with a perfect tempering curve. The workflow is linear, and each stage sets the ceiling for the next.
