A broiling pan is not simply a tray you put under a heat source. It is a managed heat interface. Its primary job is to hold food at a specific distance from a radiant heat source while simultaneously managing the byproducts of intense top-down cooking: excess fat, water vapor, and smoke. The way a pan handles these three factors determines whether the result is a dry, smoky, well-seared piece of meat or a soggy, boiled compromise. Understanding this system requires a shift in perspective. You are not buying a piece of steel; you are buying a set of thermal characteristics and fluid-management pathways that affect every dish that touches it.
The basic anatomy of a broiling pan is deceptively simple. There are two main components. The top piece, often called the slotted top, is a rigid surface with a pattern of slots, holes, or a combination of both. This piece supports the food. It is where the radiant heat first makes contact. The bottom piece, the drip pan, is a solid, watertight tray that slides under the slotted top to catch the molten fat and juices that drain off the food. The open space between the two is the critical zone.
Consider a classic scenario from a high-volume kitchen: a line cook is preparing a bistro steak for a busy Friday service. The steak, a 280-gram sirloin, is seasoned and placed onto a pre-heated, cast-iron broiling pan. The pan is slid into the broiler cabinet,
