A cake board is not an afterthought, and it is not packaging. It is a structural component of the finished cake, and treating it as anything less is the cause of many of the most common cake failures you see reported in bakery forums and customer complaint threads: a tier that has sunk into the one below it, a board that has bowed visibly after a night in the refrigerator, or a cardboard disk that has soaked through and stained a white buttercream. In professional terms, the board has two jobs. The first is to support the weight of the cake above it without bending, cracking, or breaking. The second is to provide a moisture barrier between the cake and the surface it is placed on. Both jobs have to happen simultaneously, and both have to happen for as long as the cake is meant to be displayed, transported, and served.

To understand how a cake board works, start with the mechanics of load. A cake that is 10 inches in diameter and 4 inches tall, made from a standard dense sponge and filled with buttercream, weighs roughly 6 to 8 pounds. That weight is distributed over a surface area of about 78 square inches, which gives a load of roughly 0.1 pounds per square inch.
