Open any commercial pantry or storeroom and you will find them: tins of peach halves, jars of maraschino cherries, cans of pineapple chunks, and pouches of fruit cocktail. They are so common they are nearly invisible. But the canned and jarred fruit category represents a remarkable piece of food engineering. It is a system for preserving a perishable, seasonally variable commodity - a living tissue with active enzymes - into a stable, predictable, year-round ingredient. Understanding how this preservation works is not an academic exercise. It is the foundation for every practical decision you will make as a buyer, specifier, or operator, from choosing a grade to estimating shelf life.
At its core, the product is straightforward: raw fruit is prepared, placed in a container, sealed, and then heated to a temperature high enough to destroy spoilage microorganisms. The heat also inactivates enzymes that would otherwise cause browning, softening, and off-flavors. This process is called thermal processing, and for commercially packaged fruit it is almost always done in a pressurized vessel called a retort. The retort raises the internal temperature of the container well above the boiling point of water - commonly 121°C (250°F) for low-acid foods, though fruits, being naturally high in acid, are often processed at slightly lower temperatures, typically around 100°C (212°F) or a bit above. The result is a commercially sterile product. It is not sterile in the clinical sense of being devoid of all life, but it is
