That sounds simple, but the reality is that the entire quality of your finished product—its snap, shine, mouthfeel, and shelf stability—is determined by whether this process is done correctly and consistently. Why Tempering Matters: The Case of the Wrong Crystals

Chocolate is a suspension of cocoa solids, sugar, and cocoa butter. Cocoa butter is the fat that carries the flavor and dictates its physical form. This fat is polymorphic, meaning it can solidify into a number of different crystalline structures. Think of it like snow: it can form perfect hexagonal crystals, or it can form hard pellets, or slushy flakes, all made of the same water molecules. Cocoa butter behaves similarly, but only one crystal form, called beta (type V), is desirable in finished chocolate.
