Chapter 1: Understanding Coffee Maker Water Filters

Water is the silent partner in every cup of coffee. It makes up 98 to 99 percent of your brewed beverage, but unlike the beans, water is rarely chosen deliberately. It comes from the pipe, the well, or the bottle, and it carries a specific chemical fingerprint: calcium, magnesium, chloride, chlorine, sodium, and dissolved gases. That fingerprint is the single most underrated variable in coffee quality. The filter you put between your water supply and your brewer is not a convenience item. It is the primary control you have over what your water actually does to your coffee and your machine.

So what is a coffee maker water filter, concretely? It is a device that lives in the water path between your supply line and your brewing chamber, and it performs one or more of four jobs: removing suspended particles, adsorbing volatile organic compounds (particularly chlorine), exchanging ions to alter hardness, and dosing the water with chemicals like polyphosphate to keep scale-forming minerals suspended. A filter can do all four jobs, or just one. The real-world danger is assuming that because a physical filter exists in the machine, the water is being properly treated. In nearly every case, the wrong filter for your water is worse than no filter at all.
