Starch is the most common thickening and texturizing agent in the human diet, and it is also one of the most poorly understood. Starch is a carbohydrate stored by plants as an energy reserve. It is found in the seeds, roots, and tubers of staple crops: corn, wheat, rice, potatoes, tapioca (from cassava), and arrowroot. In its raw form, starch exists as small, dense granules. These granules are not soluble in cold water; they absorb water slowly and hold their shape.
