At its core, corn syrup is a food ingredient produced by the partial hydrolysis of corn starch. Starch is a polysaccharide-a long chain of glucose molecules. When these chains are broken down via an acid or enzyme process, they yield a mixture of glucose, maltose, and longer-chain saccharides. This mixture, when concentrated to a viscous liquid, is what you know as corn syrup. Understanding this is the first step to mastering its use, because the composition of this mixture is not arbitrary; it is engineered to provide specific functional properties on which your product's performance depends.
The single most important number on a corn syrup specification sheet is the Dextrose Equivalent (DE). This value measures the extent to which the starch has been broken down. As a rule, the higher the DE, the more the starch has been hydrolyzed, meaning the more simple sugars (like glucose) are present and the fewer long-chain carbohydrates remain. A standard corn syrup, such as you might find in a grocery store, is often a 42 DE syrup. This contains a significant portion of longer-chain sugars, which makes it moderately sweet and gives it a thicker body. In contrast, a 63 DE or 70 DE syrup has been broken down further, resulting in a thinner, sweeter, more hygroscopic (moisture-attracting), and more fermentable product.
