Chapter 1: Understanding Dinnerware Sets

When a restaurant buyer orders dinnerware, they are not buying plates and bowls. They are buying a material contract with their kitchen, their staff, and their customers. That contract is defined by the physical and chemical properties of the ceramic body, the glaze that seals it, and the manufacturing processes that shape both. A dinnerware set is a collection of ceramic vessels intended for serving food, but its performance is entirely a function of engineering decisions made long before it reaches a table. To understand what you are buying, you must first understand the materials, the processes, and the standards that govern them.

Consider the most basic distinction: the clay body. The vast majority of commercial dinnerware is a type of ceramic called porcelain. Porcelain is a specific class of ceramic material fired at very high temperatures, typically between 1,200 and 1,400 degrees Celsius. This high firing temperature vitrifies the clay body. Vitrification is the process where the raw materials - typically kaolin, feldspar, and quartz - partially melt and fuse into a dense, glass-like, non-porous structure. The defining characteristic of this vitrified body is its water absorption rate. A true porcelain body will absorb less than 0.5% of its weight in water after firing. This is not a trivial specification. A high absorption rate means the body is more porous, which makes it more susceptible to harboring bacteria, staining from food and sauces, and developing cracks when moisture freezes and expands.
