Chapter 1: Understanding Disposable Plates

Disposable plates are often treated as an afterthought in food service operations, and that is exactly why they cause problems. A plate failure during service—a soggy base that collapses under a heavy portion, a grease stain that seeps through a premium-looking presentation, a plastic plate that warps when it touches hot food—can disrupt service, waste product, and reflect poorly on an operation that otherwise runs well. At the most basic level, a disposable plate is a single-use food-contact surface that must hold a portion of food, allow it to be presented and consumed, and then be discarded. That simple job description hides a complex set of requirements. A plate must provide a barrier between the food and the surface below, it must be structurally rigid enough to hold its shape under the weight of food and the pressure of a user's hand, it must not transfer any harmful substances to the food, and it must perform these tasks across a range of temperatures and conditions. No single material excels at all of these tasks, which is why the market contains a wide range of products made from paper, plastic, foam, and various fibrous materials.
