Walk into any professional kitchen before sunrise, and you will see the same quiet ritual. A baker pulls a bucket from the retarder, tips out a mass of pale, cold dough, and begins to fold it. To an outside observer, it looks like simple mixing. But that baker is managing a complex chemical and biological system that began hours or days ago. Dough is not a final product, and it is not just a mixture of raw ingredients. Defining Dough by What It Is Not
It helps to start with a boundary. Dough is distinct from a batter, though they share ingredients. The primary distinguishing factor is the hydration level, the ratio of water to flour by weight. A batter typically has a hydration above 100 percent, meaning the weight of the water exceeds the weight of the flour, which allows it to pour and flow. Dough is generally stiffer, typically ranging from 50 to 80 percent hydration for bread and pizza applications. At this lower moisture level, a cohesive, workable mass forms, one that holds a shape imposed on it, at least for a while.
