When a restaurant buyer orders "fresh beef tenderloin" or a caterer signs for a case of "frozen chicken breasts," they are receiving the end product of a biological process that began months earlier with an animal's life and ended with a series of deliberate temperature decisions. Understanding fresh and frozen meat means understanding that these are not merely two states of the same thing. They are two different products with different usable lives, different quality characteristics, and different risk profiles. The label on the box tells you what the packer intends for you to believe; the physical product tells you what actually happened. This chapter gives you the framework to read both.

Meat is muscle tissue. That fact, which seems obvious, explains nearly every behavior you will observe in both fresh and frozen product. Muscle is composed of protein fibers bundled together and surrounded by water and fat. The water is not free-flowing; it is bound within the protein structure. The proteins are not static; they are enzymes and structural molecules that respond to temperature and time. When an animal is slaughtered, the muscle does not immediately become meat. It goes through a period of rigor mortis, during which the muscle contracts and stiffens as energy reserves are depleted.
