A frozen drink maker is a refrigeration unit designed to freeze a liquid while continuously agitating it. This is the core concept. A bar blender that spins ice and liquid produces a slightly different effect: it shaves and mixes. A freezer that creates a solid block is something else entirely. The purpose of a frozen drink maker is to produce and hold a semi-frozen, pumpable slush at a consistent temperature and viscosity, ready for dispense on demand.
On a beach bar in Key West, you will see a machine holding a bright-blue piña colada mix at -5°C, keeping a constant gentle stirring motion so it doesn't separate or freeze solid.
