Pastries and scones are not just a category on a menu; they are a set of engineered food systems built on a few precise chemical and physical interactions. When a croissant shatters into crisp, brittle layers, or a scone crumbles into a soft, cakey interior, you are seeing the result of specific fats, flours, and temperatures doing their job correctly.
