Chapter 1: Understanding Pizzelle Makers

The pizzelle maker is, fundamentally, a hinged pair of heated metal plates etched with a decorative pattern. You pour a small amount of batter onto the lower plate, close the upper plate, and the batter cooks into a thin, crisp wafer bearing that pattern on both sides. Before discussing specifications and brands, it is worth considering the physical process that happens inside the machine. The plates are heated, typically by an electric resistance element cast into the aluminum or attached to the back of a steel plate. The thermostat, which may be a simple bimetallic strip or a more precise capillary tube assembly, controls the temperature at the plate surface. When you close the lid, the batter, which is a fluid slurry of flour, eggs, sugar, butter, and liquid, is pressed between the two hot surfaces. It heats rapidly, and the water and other volatiles in the batter convert to steam. This steam expands, leavening the cookie. The proteins in the eggs and flour coagulate, setting the structure. The sugars caramelize, browning the surface and contributing flavor. The fat conducts heat and aids in release from the plate. The entire process, from pouring to removal, takes between 45 seconds and two minutes, depending on the machine's temperature and the batter's recipe.
