Chapter 1: Understanding Seitan
Seitan is a cooked protein food made from wheat gluten. The word itself is a Western invention, likely derived from the Japanese term for wheat protein, but the product has roots in Chinese Buddhist cuisine, where it has been prepared for centuries as a meat substitute. What you need to understand from the outset is that seitan is not a single, standardized commodity like refined sugar or all-purpose flour. It is a processed ingredient whose final properties depend heavily on three things: the quality of the gluten protein you start with, the hydration and kneading procedure you use, and the cooking method you apply. Get these elements under control, and you can reliably produce anything from a delicate, shreddable chicken-style cutlet to a dense, sliceable deli roast. Lose control of them, and you will get tough, rubbery slabs or crumbly, dry disappointments.
To understand seitan, you must first understand wheat gluten. Wheat flour contains two major classes of storage proteins: glutenin and gliadin. When you add water to flour and mix, these proteins hydrate and form a continuous viscoelastic network. Glutenin is responsible for the elasticity—the ability of the dough to snap back like a rubber band—while gliadin contributes extensibility, the capacity to be stretched and shaped without tearing. Together, they create the network of protein bonds that gives bread its structure and gives seitan its characteristic meat-like chew.
