Chapter 1: Understanding Sour Cream
Sour cream is a fermented dairy product, and its entire character—its tang, its thickness, its behavior in a hot sauce or a cold dip—comes from a single biological process: the conversion of lactose into lactic acid by a specific set of bacteria. To understand the product, you have to understand that fermentation, not the cream itself, is the defining factor. The starting material, the cream, is simply the canvas and the nutrient source.
The base of any sour cream is cream with a known milkfat content. In most commercial production, this is standardized sweet cream, typically between 18% and 20% milkfat for standard sour cream, though this varies by country and by product label. This cream is first pasteurized, not only to kill pathogenic bacteria—which is a public health requirement—but also to denature the proteins and enzymes in the cream. This is a critical preparatory step for the fermentation that follows, which we will explore shortly.
After pasteurization, the cream is homogenized. This is a purely mechanical process that forces the cream through a small nozzle under high pressure, reducing the size of the milkfat globules and distributing them evenly throughout the liquid. Homogenization prevents the cream from separating into a fat layer on top and a milk layer on the bottom, and it creates a smoother, more uniform mouthfeel. The resulting liquid is stable and ready for the next stage.
While cream is the physical base, the life of the product is the culture.
