Chapter 1: Understanding Spinach
Spinach is not a delicate green that happens to be popular. It is a cold-hardy, rapidly growing annual plant whose commercial value depends entirely on speed: speed from seed to harvest, speed from field to cooler, and speed from retail shelf to plate. Every quality problem you will ever encounter with spinach - the limp leaves, the yellowing, the bitter edge, the slimy bag - traces back to a failure to manage one of these timelines. Understanding why spinach behaves the way it does, and why it fails when it fails, is the foundation for every buying, storing, and processing decision you will make with it.
Botanically, spinach is Spinacia oleracea, a member of the amaranth family (Amaranthaceae). It is not remotely related to kale or collard greens, which are brassicas. It is not related to Swiss chard, which is a beet. It has no close commercial cousins at all. What matters about this fact is that spinach has a distinct physiology from the other greens stacked next to it in your cooler, and treating them the same way will cost you product. Spinach leaves are thin, with a high surface-area-to-volume ratio and a thin cuticle, meaning they lose water faster than thicker, waxier leaves like cabbage or even loose-leaf lettuce. This makes spinach uniquely vulnerable to moisture loss and wilting, and uniquely responsive to proper handling.
