A sushi mat, referred to in Japanese as a makisu, is a flexible lattice woven from slats of bamboo, wood, or occasionally synthetic polymer, designed to shape and compress sushi rice and nori into a cylindrical form. At its core, it is a simple fulcrum and lever system. When you press down on the rolled portion of the mat, you translate a downward force into inward radial pressure, compressing the rice and forcing the outer layer of nori to adhere to itself.
