What a Tomato Is, and What It Is Not
A tomato is the berry of a flowering plant in the nightshade family, Solanum lycopersicum. Its botanical classification as a fruit is not a trivial technicality; it explains the tomato's biological function, its growth habit, and critically, its post-harvest behavior. The plant produces this berry to hold and disperse seeds. The flesh is a water-and-sugar matrix, a structure that is fundamentally perishable and continues to change after it is picked. If you handle tomatoes as if they were a stable commodity, you will be disappointed by the results. If you understand them as living, respiring organs, you can work with their biology instead of against it.
You will often hear tomatoes described as "vegetables" in a culinary context. This is fine linguistically, but it is dangerous operationally. A zucchini, a potato, or a head of lettuce has a different physiology, different storage requirements, and different ripening windows than a tomato. Treating a tomato like a potato (cool, dark, long-term storage) will ruin its texture and flavor quickly.
