A motor or manual lever drives a heated upper platen down onto a heated lower platen, sandwiching a dough ball between two flat, non-stick surfaces. The platens are usually made of cast aluminum or steel and coated with a release agent like Teflon or ceramic to prevent sticking. This direct-contact method cooks the dough quickly, developing the firm yet pliable structure characteristic of flour tortillas and many flatbreads. A critical element here is the gap between the platens—often measured in fractions of a millimeter—because it dictates the final thickness of the product.
