The Water Oven: A Distinct Tool, Not a Sous Vide
A water oven is a closed, insulated cooking chamber that uses heated water rather than air as the primary heat transfer medium. It is a sealed, self-contained system that circulates water around food items placed directly in the chamber, maintaining a precise, uniform temperature throughout the cooking process. While it is often compared to a sous vide circulator or a combi-steamer, the water oven is a distinct piece of equipment with its own physics, behavior, and applications. Understanding that distinction is the first step toward using one well.
Consider a standard bakery producing delicate custards. A conventional deck oven heats air to 160°C, which does two things simultaneously: it cooks the protein structure and drives moisture from the surface. The result is a skin and a crust. If you need a custard without that skin, with a homogenous texture from edge to center, a hot air environment is a poor tool. A bain-marie helps by providing a buffer of water, but a bain-marie in a hot oven still relies on air for the top surface. The water oven solves this completely by submerging or floating sealed trays directly in water at 85°C. No surface moisture loss occurs, no hot air touches the food, and the thermal gradient is so gentle that the center and edge of the product finish at nearly the same moment.
