Chapter 1: First Day

Welcome to day one. I'm going to be straight with you: today you are going to light a real fire, put real food over it, and eat something you cooked yourself. That's the whole session. No technique jargon, no \"mastering the sear,\" no thirty-step recipes. Just you, a grill, and one piece of food that you'll be genuinely proud of by the end.

Before we go anywhere near the grill, let's get one thing out of the way. If you've never done this before, you might have a picture in your head of what this looks like. Maybe it's a backyard full of friends, a cold drink in your hand, and you flipping burgers like you've done it your whole life. Let me adjust that picture. Day one is going to be a little awkward. You'll probably fumble with the lighter, you might get ash on your shoes, and there's a real chance your first piece of chicken will be slightly overcooked. That's not a failure. That's the tuition fee for learning something hands-on. Every single person who is good at grilling has a story about burning their first steak. Today, you're just joining that club.

Here's what you need to have on hand before you start. A grill. If you have a gas grill, great. If you have a charcoal kettle grill, even better for what we're doing today. If you have neither, and a neighbor or friend has one you can borrow, that works
