Chapter 1: First Day

Welcome. If you're reading this, you've probably been curious about knife skills for a while. Maybe you've watched a chef on a cooking show make perfect, uniform cubes of onion and thought, "I could never do that." Or maybe you're just tired of struggling with a dull knife every time you cook dinner. Either way, you're here now, and that's the only requirement. This guide is not about becoming a professional chef in ten days. It's about giving you a real, honest taste of what knife skills are like, so you can decide if it's something you want to keep working on. Today, on day one, we're just going to get you comfortable with the tool in your hand.

Your first session is going to be short. This is not a marathon. You're going to spend about twenty to twenty-five minutes, total, from start to finish. That's it. The goal isn't to produce anything impressive. In fact, you won't be making a meal today. You'll be doing something much more foundational: you'll be building a feel for the knife. But before we even pick up the knife, you need to set up your space. The single most important thing to check is that your cutting board is stable.
