Chapter 1: First Day

The first session is not about impressing anyone. It's not about making something pretty, or uniform, or even particularly edible. The first session is about getting your hands into flour and understanding, for the first time, what pasta dough actually is and feels like. You're going to make a mess, you're going to be a little awkward, and that's not just okayβ€”it's the entire point.

So let's talk about what you need before you start. You don't need a pasta machine. You don't need a wooden rolling pin, a marble slab, or any of the beautiful equipment you've seen in videos. You need a counter or a large cutting board, a bowl (any bowl), a fork, a measuring cup, and a measuring spoon. If you can measure a cup of flour and a teaspoon of salt, you have all the measuring tools you need. For today, you'll also need one egg and a few tablespoons of water. That's it. That's the entire shopping list.

Find a flat surface at a comfortable height. If you're short, pull up a chair or a step stool. If you're tall, bend your knees slightly so your back doesn't ache. Your hands will be doing the work, but your posture determines how long you want to keep at it. Before you pour anything out, take a breath. This is the moment where people either start or stall. Just start.
