"Alpha-gal" is short for a type of sugar molecule called galactose-alpha-1,3-galactose. You'll hear it referred to simply as "alpha-gal." This molecule is found in the cells of almost all mammals — that means animals like cows, pigs, sheep, deer, and even pet cats and dogs — but it is not found in humans.
