So, the doctor just told you it’s a shellfish allergy. Maybe you saw the words on a piece of paper, or maybe you had a reaction that scared you and your family half to death. And now you’re sitting somewhere, maybe with a cup of tea you’re not really drinking, and your brain is a loud, messy loop of questions. What does this even mean? How did this happen? Am I going to accidentally die from a french fry cooked in the same oil as a shrimp? Let’s take a breath. All of that is scary, and all of it is worth understanding. And the first step to understanding is to peel back the curtain on what’s actually happening inside your body.
In the simplest terms, a shellfish allergy is a case of mistaken identity. Your immune system — the elaborate security system that protects you from viruses, bacteria, and other genuinely bad guys — has decided that a specific protein found in shellfish is a dangerous intruder. It’s not, of course. To most people, that protein is just dinner. But to your immune system, it looks like the biological equivalent of a wanted criminal.
