About this book

Baking chips are not just a bag of chocolate drops. Their performance in a muffin, cookie, or enrobed confection depends on a precise set of specifications—cocoa butter percentage, the type of fat used, the size and shape of the drop, and the additives that keep them from melting into a puddle. The Complete Handbook of Baking Chips is a practical field guide that treats baking chips as the technical ingredient they are. It explains, with concrete examples, how a 200-count-per-pound chip will behave differently in a cookie versus a 400-count chip, and why a compound chip with palm kernel oil is a better choice for a shipping-stable product than a real chocolate chip with high cocoa butter.

This is not a recipe book. It is a reference for procurement and production. The chapters walk you through selecting chips based on your specific workflow, installing proper storage and tempering systems, and diagnosing common failures like fat bloom, cracked chips, or inconsistent melting. It also looks at the business side of the category—how to evaluate suppliers, the viability of private-labeling a chip, and where the market is heading with new ingredients and regulatory pressure.

Written for buyers, bakers, and business owners, the book replaces a binder full of conflicting datasheets and marketing verbiage with one clear, actionable source. Whether you are running a high-volume bakery or a small-batch artisan shop, the information here is meant to save you time, product loss, and the cost of a bad batch.

Finally, a book that treats baking chips like the technical ingredient they are, not just something you toss in a mixing bowl. The chapter on understanding what's actually inside a chip - the fat percentages, the lecithin, the chip count - is worth the price alone. I've been running a small bakery for six years and I had to learn all of this the hard way. The troubleshooting section on fat bloom is something I wish I had years ago. My only complaint is the print; I got a proof copy and a few pages had slightly smudged ink, but from a content standpoint, this is exactly what I needed. I just ordered two more copies for my staff.
