About this book

From simple sugar sprinkles to elaborate wafer paper toppers, edible baking decorations are a critical element in modern baking. Yet, for the professional or serious enthusiast, the market can be a confusing place, filled with contradictory marketing claims and a lack of clear technical data. This handbook cuts through the noise and provides a comprehensive, practical reference covering the entire lifecycle of these products.

Inside, you will find detailed breakdowns of the types and specifications of edible decorations - from ingredients and shelf life to moisture resistance and color stability. Learn how to select the perfect material for your specific project, whether it's a delicate wedding cake, a high-volume run of cupcakes, or a temperature-sensitive dessert. The book also covers correct installation and usage techniques that prevent common issues like bleeding colors or brittle sugar work, and provides a structured approach to maintenance and troubleshooting that will save you time and materials.

Beyond the products themselves, this handbook offers a clear-eyed look at the industry, including a balanced analysis of brand positioning and concrete business opportunities in reselling, consulting, and private labeling. It also provides a forward-looking chapter on future trends and the resources you need to stay current. Written for professionals who value practical knowledge over hype, this is the only resource you'll need to master the art and science of edible baking decorations.

It's a solid reference, but I was hoping for more depth on troubleshooting. The chapter on choosing the right material was excellent - the comparison of wafer paper vs. sugar sheets based on humidity was very practical. However, I had a specific issue with frosting sheets on chocolate ganache and the troubleshooting section felt a little too general. It's a good book for your library, just not the last word on every problem.

This is the most clearly organized and genuinely useful book on decorations I've bought. I run a small bakery and the section on sugar shards - specifically how they react to different ambient conditions - saved me a day of wasted production. It's not flashy, but the information is dense and exactly what you need. I wish it had actual brand-name recommendations in the brand chapter, but I understand the reason for keeping it generic. Overall, a great working reference.

I was given this as a gift, and it's better than most of the technical manuals I use. As a cake decorator, I found the chapter on storage and stock rotation incredibly helpful - I feel like I have real control over my materials now instead of just hoping they're okay. It lost a star because I don't need the long business opportunities section, and the furniture/display examples felt a bit out of place for a book focused on baking. The main technical content, though, is a must.
