I bought this because I was tired of guessing why my cherry pies would turn out runny one day and fine the next. The troubleshooting chapter in here is genuinely helpful, and it explained to me that my problem was a combination of a low Brix filling and my convection oven. I'm giving it three stars instead of four or five because I found the first half of the book to be a bit too academic, the section on the business opportunities felt like a little bit of a stretch, and there's not a ton of actual recipes to use. But as a reference for someone with a tiny bakery, it's solid, and I've definitely had less waste since I started reading it.

It's a decent reference and it's factual, but I have some reservations after the purchase. As someone who works in foodservice, I found the chapter on choosing the right filling very useful, especially the part on calculating cost-per-serving versus just looking at the price per pail. But I was hoping for a little more depth on the chemical differences between modified food starches, and sometimes it feels like the book is written more for a hobbyist than a serious facility. It taught me a couple of things about storage that I didn't know, so it's not a bad use of money. I just kind of wish I could have rented the specific chapter PDFs instead of buying the whole thing.
