The category most people call "tofu, soy, and vegetarian products" is not a collection of single foods. It is a family of engineered food systems built from one foundational ingredient: the soybean. Whether you are buying a block of nigari-set tofu for a restaurant, specifying a soy-based chicken strip for a frozen entree, or evaluating a new plant-based drink for a retail shelf, you are dealing with modified soybean proteins, water, fats, and occasionally a coagulant or a fermenting culture. The practical difference between a great product and an unusable one is not in the branding. It is in the processing history — how the soy was handled, what coagulant was used, how much water remains, and what that does to the protein network under heat, acidity, or freezing.
To work with these products seriously, you need to start with the seed. A commodity soybean grown for crushing contains roughly 35 to 40 percent protein, 20 percent oil, 30 percent carbohydrate (mostly insoluble fiber and oligosaccharides), and 10 percent moisture. But the soybeans you buy for tofu and soy milk are not the same seeds used for animal feed or oil extraction. Food-grade beans are selected for their protein solubility, the absence of off-flavors, and the balance of glycinin and beta-conglycinin, the two main storage proteins.
